I also think it unlikely that a sponsor will accept the packaging of a gnome-shell-extension as proof of packaging skill. The best advice I know to give you is to try packaging something on the Fedora wishlist[1] and do informal package reviews for current Fedora review requests (be sure to state that you're doing the informal review to attain sponsorship).
