I cannot do a runtime test anyway...
Even with alsa, traverso tells that it cannot AudioDevice Tread to realtime
priority. I will try with Rawhide or a less tweaked Fedora.

As soon as the sound works from the application, I don't care which server
output is used by default. once that said configuring jack from scratch is
probably harder than tweaking the few options needed to have PA to work
natively.
But anyhow, hardcoding the default will never be better than having the native
audio output correctly detected at runtime. That should be the longer term
plan...
