NVIDIA driver and graphical grub2?

How that can matters ? either you have the related grub2 options in
your grub.cfg either you don't.
Please try to debug grubby behaviour form the xorg-x11-drv-nvidia
%post installation script.

You are not expected to have a graphical boot at all from a package
installation alone.
