I saw 7.3.76 was released so I built local packages to test things out. There are some significant changes, the biggest one being moving from Java 8 to Java 11. I also noted[1] some strange output but it doesn't seem to stop unifi from working, however, it appears that the webserver can take some time to start up. I initially got a 404 NOT FOUND error but refreshed a few times and the unifi login page did eventually load.
